New! Extended Shop Hours

Beginning August 1st, 2007 our retail shop in Woodinville will be open Tue - Wed - Thu from 9AM - 4PM. Our volume of foot traffic in the shop continues to rise and we hope that these hours will make us available to more of you... more often!

Our little cookbook may not be on the 'Best Seller List' but so many of you now have a copy on your bookshelf... that we have totally 'Sold Out' of our first printing!!

So what's left? Twigs 'n' Dirt??

I often have people come by the shop, just after having received a diagnosis of Celiac Disease or from getting test results from an allergist. They have that 'deer in the headlights' look in their eyes, wondering how they'll survive without the foods they used to enjoy. With Celiac it's generally 'Gluten' alone that has to be removed from the diet (though upon diagnosis some people's systems are damaged to the point that Dairy is often taken out as well to promote faster healing); with others it's a diagnosis of 'Multiple Food Sensitivities' leaving them even more dismayed.


I try to stay on top of things by using Mona's Mixes in various ways to meet the needs of all kinds of dietary restrictions, not only limiting what I offer to those who live Gluten Free. With the products in the current lineup, you will find everything to be free of Wheat/Rye/Oats/Barley/Corn/Soy.

When using our 'sugar free' mixes you will have the option of using whatever sweeteners suit your specific dietary needs. There are also many choices in the market place today for Dairy Substitutes for 'butter' as well as 'milk' called for in baking. I still jokingly refer to recipes which adhere to multiple food sensitivities as 'T & D'... standing for 'Twigs & Dirt'... but with all of the great options available today, you can certainly stick to your special diet and enjoy treats that are far from 'T & D'!!

The following recipe is free from:

Wheat/Rye/Oats/Barley/Casein/Eggs

~ Mona's T & D Molasses Buttons ~

2 C + 2 Tbs. Mona's Multi Mix
2 tsp. Baking Soda
1 tsp. Powdered Gelatin
1 tsp. Ground Ginger
3/4 tsp. Ground Cinnamon
1/4 tsp. Ground Cloves
1/4 tsp. Salt


1/2 C. Butter Substitute (Earth Balance Shortening or Margarine in solid sticks are GREAT!)
1/2 C. Organic Sugar
1tsp. Egg Replacer (Ener-G Foods) mixed in 2 Tbs. warm water
1/2 C. Molasses
1 - 2 Tbs. Warm Water (as needed)
2 Tbs. Organic Sugar (for topping cookies)



In a large bowl mix together: Multi Mix, baking soda, gelatin, spices and salt. In a second bowl cream butter substitute together with sugar, add molasses and egg replacer-water mixture and beat until smooth.


Slowly add dry ingredients with mixer on low, adding additional water just as needed to keep a good, soft consistency (finished dough should be soft and easily shaped, yet not sticky).


Line baking sheets with parchment, roll dough between your palms in balls just slightly smaller than 1 inch and place on sheets about 1 inch apart. Using the bottom of a drinking glass, dip into sugar then press down firmly on each cookie.


Bake at 325F for about 12 minutes.

Looking for a Great, Square ... Bottom?


... then look no further! Do I have a square bottom for you!! :)

Our Bread/Roll & Pastry Mix makes a great 'pat in pan' square bottom!! Not only will you be able to make the Lime Meringue Squares as shown above in a snap... but revive any of your old family 'square or bar' recipe favorites, with a new Gluten Free twist! This will also serve very well as a base for Cheese Cakes, Ice Cream Cakes, etc! With a great Square Bottom made with Mona's Bread/Roll & Pastry Mix and your culinary imagination... the pie's ...um, I mean sky's the limit :)


~Mona's Lime Meringue Squares~

Bottom ~ Crust

1 C Mona's Bread Roll & Pastry Mix
1/3 C Powdered Sugar
1/2 C Butter, Softened

Lime Filling

1 C Sugar
6 Tbs Lime Juice, Fresh Squeezed (about 3 med limes)
6 Lg Eggs, Separated (reserve 3 whites for Meringue and the remainder for another use)
1/4 C Butter, Softened

Meringue

1/2 tsp Cream of Tartar
1/3 C Sugar
1/3 C Coconut, Flaked~Sweet


Directions

Preheat oven to 375 F.
For Crust: In a medium bowl; combine Mona's Bread/Roll & Pastry Mix, powdered sugar and soft butter. Work together with your fingertips until the consistency of small peas. Press into the bottom and slightly up the sides of a 9 x 9" square pan. Bake for 15 minutes then place on wire rack.

For Filling: While crust is baking, in a medium saucepan over medium heat; combine 1 C sugar, lime juice, 6 egg yolks and butter. Cook 8 - 10 minutes, whisking frequently until thickened. Remove pan from heat and set aside for about 10 minutes, stirring once. Spread lime filling evenly over crust.

For Meringue: Combine 3 egg whites and cream of tartar in a medium bowl. Beat on high speed until soft peaks form. Continue beating on high while slowly adding 1/3 C sugar. Beat until stiff peaks form. Spread meringue over lime filling, making sure to come to the edge of the pan all around. Using the back of your spoon, press down firmly into the meringue (but not allowing the spoon bottom to go through to the lime filling) and pull straight up to create nice swirly peaks. Carefully sprinkle coconut over top.

Return pan to oven at 375 F for 7 - 10 minutes to brown meringue and coconut. Keep an eye on it as it will brown very quickly once it begins.

Allow to fully cool, then cut into 16 squares using a sharp knife dipped into hot water.
